Happy to inform that @Paytm @Paytmcare has taken due cognizance of this issue and refunded the unauthorized toll charges and also replaced the problematic FASTag sticker with a new one.

@vijayshekhar Currently, there's no way to change one's UPI ID. Also, there's no way to raise this issue on support on the app. Other apps allow you to do this very easily. @Paytmcare
